“Cha-cha-cha-chia”. Oh, you remember the song and those cute little clay critters from the early nineties. Just water and wow, you have a chai seed-sprouting masterpiece. Well those very same seeds are a big deal these days, but for a very different reason. They are an incredibly nutrient-rich, super seed, with a lot of versatile functions. Great as an egg replacer in baked goods, a nice complement to your morning smoothie, an interesting, yet tasty addition to kombucha, and a great way to add more texture and nutrients to nice cream.
Cherries, berries and pomegranates also have a lot going for them. Antioxidants, dietary fiber, phytonutrients, and flavor! Throw them all together and what do you have? Na-na-na-nice cream.
CHERRY BERRY CHIA NICE CREAM
Recipe by Jentry Lee Hull
Yields 2 servings
Nice Cream Ingredients:
- 2 frozen bananas (peeled and broken into chunks before freezing)
- ¼ cup frozen raspberries
- ½ cup frozen cherries
- ¼ to ½ cup plant milk
- ½ tsp. pure vanilla extract
- 1 Tbsp. chia seeds
Toppings:
- Pomegranate seeds
- Slivered almonds
Directions:
- Place all contents in a high-powered blender and blend until creamy and smooth. Scrape down sides as you go. Add more plant milk until desired consistency is reached.
