I think we can all agree that classic hummus is a gift from the heavens. So creamy and smooth, substantial enough for a filling snack, and perfect for any party or gathering. But, what if I told you that hummus made with edamame is even better? This Edamame Ginger Lime Jalapeño Hummus is a whole new level of delicious – breaking all hummus boundaries with its unique and sumptuous flavor. Edamame (soybeans) are one of nature’s most perfect foods. They’re rich in protein, fiber, antioxidants, and all sorts of essential micronutrients. Ginger root, jalapeños, garlic, and lime also offer great health benefits. Get to cooking, my friends. You’re in for a treat.
Edamame Ginger Lime Jalapeño Hummus
adapted from Edamame Ginger Hummus on the 30-Day Vegan Challenge
Yields about 2.5 cups
Ingredients:
- 2 cups shelled edamame (cooked or thawed from frozen)
- 3 garlic cloves, crushed
- Thumb-sized piece of raw ginger root, peeled and roughly chopped
- 2 Tbsp. tahini
- Juice from 1 lime
- Juice from 1/2 small orange, optional (for added sweetness)
- 1/2 jalapeño, seeded and diced
- 1 tsp. pink Himalayan salt
- 1/2 tsp. cayenne pepper
- 1/2 tsp. coriander
- 1-2 Tbsp. apple cider vinegar*
- 1-2 Tbsp. water*
- For garnish: a sprinkle of paprika with thinly sliced strawberries, cucumbers, and/or more jalapeño
Directions:
- If using frozen shelled edamame, run under lukewarm water or set in the fridge the night before to thaw out (a more water-saving method).
- In a food processor, combine edamame, garlic, and ginger root. Pulse for 1-2 min.
- Add in all the remaining ingredients, except for apple cider vinegar and water, and blend until smooth.
- *Add 1 Tbsp. of apple cider vinegar + 1 Tbsp. water and blend until smooth and creamy. To thin out, add another Tbsp. of vinegar and water.
- Garnish with sliced strawberries, cucumbers, more jalapeño and a dusting of paprika.
- Enjoy with fresh veggies, pita bread, crackers (Mary’s Gone Crackers are GF and super tasty), or skip the nonsense and it with a spoon!
