Pumpkin Muffins with Granola Crumble.  Made with nutrient-rich almond meal, oat flour and real pumpkin, these slightly sweet treats are brimming with fiber, protein and vitamin A.  They also happen to be free of oil and refined sugar.  Bake and fill your whole house with the smell of cinnamon and pumpkin spice goodness.

PUMPKIN MUFFINS WITH GRANOLA CRUMBLE

Vegan, dairy free, gluten free, refined oil free

Recipe by Jentry Lee Hull adapted from Hot for Food

Yields 6 Jumbo Muffins or 12 Regular Muffins 

You will need: a silicone muffin pan or regular muffin pan + liners

INGREDIENTS

  • 1 ½ cups almond flour (Bob’s Red Mill)
  • 1 cup oat flour
  • 2 tsp. pumpkin spice
  • 1 tsp. cinnamon
  • 1 tsp. baking powder
  • ½ tsp. pink Himalayan salt
  • 1 cup organic pumpkin (Farmer’s Market Foods)
  • 8 oz. (1 cup) plant milk (soy, almond, cashew)
  • splash of apple cider vinegar (or white vinegar)
  • 1 tsp. pure vanilla extract
  • ½ cup unsweetened apple sauce
  • ¼ cup maple syrup
  • ¼ cup coconut sugar or date sugar + more for topping
  • granola for topping (I used Purely Elizabeth’s Pumpkin Fig Ancient Grain Granola)

METHOD

  • Preheat oven to 375 °
  • Line a muffin tin with muffin papers or use a silicone muffin baking pan (no liners or oil needed).
  • In a small mixing bowl, whisk together almond flour, oat flour, pumpkin spice, cinnamon, baking powder and salt.
  • In a large mixing bowl, combine pumpkin, plant milk, apple cider vinegar, vanilla extract, apple sauce, maple syrup, and sugar. Whisk vigorously, using a wire whisk or standing/electric mixer, until everything is smooth.
  • Slowly add flour mixture to the pumpkin mixture and blend just until ingredients are well-incorporated.
  • Using a 1/3 cup measuring cup or cookie scooper, spoon mixture into muffin cups until each one is filled about 2/3 full.
  • Sprinkle with dash of coconut/date sugar and granola on each muffin.
  • For jumbo muffins, bake for 20-25 minutes. For regular muffins, bake for 15-20 minutes.  Test doneness by placing a toothpick into the middle of a muffin.  If it comes out clean, you’re good to go.
  • Let cool a few minutes before serving.
  • Enjoy within 3-5 days of baking.
