Some call it Romanesque cauliflower, others may call it Romanesco broccoli. But, all the cool kids call it Romanesco. This intriguing member of the Brassica oleracea species caught my eye in the produce section the other day, and as I stopped to gaze in bewilderment, oohing and awing, fellow shoppers looked at me like I was a nut. Can you blame me, though. What a beauty! A Roman beauty, in fact, as its roots trace back to Roma, Italia.
Aside from its striking appearance, Romanesco contains an abundance of antioxidant compounds known to have possible anticancer effects. Not to mention, it’s rich in fiber, folate, and vitamins K, E and C. And how does it taste, you might wonder? Romanesco has a light, nutty flavor, which complements any dish or shines as the main course.
Try it out with one of these recipes and let me know what you think.
- ROASTED ROMANESCO
- ROMANESCO WITH GREEN HERB SAUCE
- CRISPY ROMANESCO TACOS WITH SLAW & AVOCADO CREAM
