Lettuce celebrate friday with a SUPER LOVE SALAD! (hardy har!) This recipe is one that I modified from a delicious salad made by Tahoe Natural Foods. Each ingredient in this salad is a Superfood, so get your cape out and whip this up for an excellent side. Make extra because you are going to want seconds.
Serves 2 for main course of 4 for a side
Ingredient list:
Dinosaur Kale – 2 bunches
1 medium golden beet – shredded
1 medium carrot – shredded
1/2 medium bell pepper chopped small
2 green onions – I eat the feet – thats the white hairy thing in the photo! chopped
Dressing:
2T cold pressed olive oil
1T Shoyu
1t Ume Plum Vinegar (you can also use apple cider vinegar)
1/4 elephant garlic clove – minced
1/2T Dried Oregano
1/2T Dried Basil
Garnish:
1t sesame or hemp seeds
Process:
Cut the stems out of the kale, then slice horizontally into 1″ pieces. Put in oin a bowl and Massage it for 3 minutes.
Cut up the rest of the ingredients and put them in the bowl with the kale.
Blend the ingredients for the dressing with a whisk. Pour it on top of the veggies and mix it well. Top it off with sesame seeds.
It keeps well in an air tight container. I always make double the recipe!
The sweet, hearty taste of this vegetable delight is AMAZING!
