Short and sweet. That’s what today’s Sweet Potato Toast Recipe is all about. Just slice, toast, top with goodies and eat! No mixing, stirring or major prep work. Enjoy for breakfast or make for your next party appetizer.
SWEET POTATO TOAST
Vegan, gluten free, grain free
Recipe by Jentry Lee Hull adapted from Little Bits Of
Yields 6-8 small pieces of toast
TOAST INGREDIENTS
- 1 medium sweet potato or red yam
TOPPINGS
- almond butter
- sliced banana
- blueberries
- mashed avocado
- chickpeas
- sliced tomatoes
- hemp seeds
- salt and pepper
- hot sauce
TOAST METHOD
- Scrub and rinse sweet potato. Pat dry. Leave peel intact.
- Cut in half, widthwise.
- Slice both halves, lengthwise, into ¼ to ½ inch thick slices.
- Toast slices using a toaster or toaster oven, on the high setting for 1-2 rounds or until edges are lightly browned.
- Add toppings and enjoy!
