If you love Quinoa [KEEN-wah] as much as we do, you know that it’s savory, filling and delicious, making it a great side dish for almost any meal. But, what about quinoa for breakfast? Let me just say this tasty, tiny superfood is an excellent way to start your day! QUINOA GRANOLA

adapted from the Hungry Hungry Hippie 

Ingredients:

  • 2 cups whole organic rolled oats (certified gluten free)
  • 1/3 cup quinoa
  • 2 T chia seeds  or flax seeds
  • 3/4 cup raw almonds, coarsely chopped
  • 1/4 cup raw pumpkin seeds
  • 1/4 cup raw sunflower seeds
  • 2 tsp cinnamon
  • 1/4 tsp Himalayan salt (or to taste)
  • 1/3 cup raisins
  • 1/2 cup maple syrup
  • 1/2 cup coconut oil, melted

Directions:

Preheat oven to 225 degrees F.

In a large mixing bowl combine all dry ingredients (oats, quinoa, seeds, chopped almonds, etc.). Mix well. Add melted coconut oil and maple syrup.

Line a baking sheet with parchment paper and spread granola evenly on top.

Bake for 60 minutes.

Allow granola to cool completely. Remove from the baking sheet, crumble and enjoy. Or, store in an airtight container to save for later.
