It’s Friday, friends! And that means it’s smoothie day. Well, not officially. But, hey why not? Smoothies are fresh and super nutritious. They fill you up with fruits, veggies, nuts, seeds, and a whole lot of nutrients, giving you more bang for your bite.

This Berry Beet Smoothie was inspired by the Pink Power Detox Smoothie from Oh She Glows. Each ingredient was hand-picked and carefully chosen to help play a role in supporting health and recovery, especially after a good workout. Lots of electrolytes 🙂

BERRY BEET SMOOTHIE

Adapted from Pink Power Detox Smoothie from Oh She Glows

Yields 4 cups (~1 generous serving)

Ingredients:

  • 1 cup water, coconut water or almond milk
  • 1/2 medium avocado, pitted
  • 1 cup fresh baby kale
  • 1 cup frozen berries (any variety will do, but raspberries and strawberries seem to work best)
  • 1 small/medium beet, ends trimmed and roughly chopped*
  • 1 lemon or lime, juiced (about 3 tablespoons or so)
  • 1 Tbsp. almond butter
  • 1 Tbsp. chia seeds (optional)
  • 4 large ice cubes
  • 1 granny smith apple (if sweeter smoothie is desired)

Directions:

  • If you have a high-powered blender, just add all ingredients and pulse a couple times, then blend for a few minutes until the consistency is smooth.
  • If your blender can’t handle all the roughage, try steaming the beet beforehand and then blend until smooth.
