How many holiday parties are on your calender? One, five, or even ten? I know how it is this time of year. Everyone is gathering to celebrate the holidays with friends, family and co-workers, and there are only so many hours in the day. Between work, kiddos, exercise, holiday shopping, and everything else it’s hard to find extra time to prepare a dish for the next holiday party potluck. So here is a simple, delicious, healthy, quick recipe sure to please a hungry crowd of jolly party goers!
SPICY ROASTED RED PEPPER HUMMUS (adapted from Tori Avey)
Ingredients:
- 2 cans chickpeas/garbanzo beans (15 oz. each), drained and rinsed
- 3/4 cup roasted red bell pepper
- 1/4 cup tahini paste
- 2 tbsp extra virgin olive oil
- 1 1/2 tbsp balsamic vinegar
- 1 tbsp orange champagne vinegar
- 1 1/2 tbsp fresh lemon juice
- 3 cloves crushed fresh garlic (or more to taste)
- 3/4 tsp paprika
- 3/4 tsp cayenne pepper
- 1/2 tsp pink Himalayan sea salt
- Warm water as needed
Directions:
In a food processor combine roasted peppers, chickpeas, tahini paste, olive oil, both vinegars, lemon juice, garlic, and spices. Pulse ingredients for about a minute then blend for 1-2 minutes until the consistency is smooth and creamy. To thin out, add a little warm water until desired consistency is reached. Taste the mixture and add more salt, lemon juice, cayenne or garlic to taste. Process again to blend any additional ingredients.
This is great served with carrots, bell peppers, celery, tomatoes, cucumbers, and warmed pita bread or pita chips.
It’s also easy to make a double or triple batch that you can bring to your long list of gatherings.
