So it’s the beginning of a whole new year and now is the time we all get to start fresh. Part of starting anew involves reevaluating and sprucing up our diets. Sayonara, sugar cookies! Hello, greens! Brussels sprouts are the underrated cruciferous veggie. They deserve more cred for their long list of health benefits and yummy (yes, I said yummy) flavor. Before you turn your nose up at these little super greens, hear me out.

The HEALTH BENEFITS OF BRUSSELS SPROUTS are pretty impressive.

1 cup of Brussels sprouts contains:

  • 38 calories
  • 0 grams of fat
  • 8 grams of carbohydrate (including 3 grams of sugar and 2 grams of fiber)
  • 3 grams of protein
  • 195% DV of vitamin K
  • 125% DV of vitamin C
  • 10% DV or more of vitamin A, vitamin B-6, folate, potassium and manganese

According to MEDICAL NEWS TODAY, “many studies have suggested that increasing consumption of plant foods like Brussels sprouts decreases the risk of obesitydiabetesheart disease and overall mortality while promoting a healthy complexion, increased energy, and overall lower weight.”

And if that’s not enough, by golly, Brussels sprouts may even HELP YOU LOOK YOUNGER! “The antioxidant vitamin C, when eaten in its natural form (in fresh produce as opposed to supplement form) or applied topically, can help to fight skin damage caused by the sun and pollution, reduce wrinkles and improve overall skin texture. Vitamin C plays a vital role in the formation of collagen, the main support system of skin. You may think automatically reach for citrus fruits when you think of vitamin C, but Brussels sprouts provide a whopping 75 milligrams per cup, over 100% of your daily need. Vitamin A is also crucial for healthy looking skin, which Brussels sprouts also provide.”

Yeah, these guys are pretty darn amazing. So, why shouldn’t we all fuel our bodies with the best of the best? Okay, so maybe Brussels sprouts have a bad rep because of their stinky aroma (when boiled) or they’re bitter if picked at the wrong time. However, if you find the right recipe, you’ll see that Brussels sprouts are actually quite tasty.
