Many of you know our household is vegan. Our eating habits are a reflection of our moral standards and I have eaten this way since 1999. I consider all things that matter most to me when it comes to food. My love for my own health and the welfare of animals is equal.  You will be surprised to know I haven’t always been a healthy vegan. Many of my first 5 years were spent dipping greasy french fries into heinz, eating tons of bread and processed food. I didn’t even care about sugar content. As long as it was vegan, I’d eat it!

In the past 7 years since Chad and I moved back from L.A. our lifestyle has taken a major upturn. We started really focusing on nutritious foods because of the change in my job and because I was training to win the world kung fu tournament. That’s when we started to eat REAL FOOD. Since we made that shift there have been many other welcome shifts in our lives. Better health, better feelings, clearer thoughts, better sleep and more energy are the result.

People ask me what I eat. This is a snapshot of what I ate this week with some links to recipes included. You will note that I don’t really snack. Not because I am counting calories, but because I only eat when I am hungry. Nutritious food keeps you fuller longer so hunger is something I experience only at mealtime.

I love my vegan lifestyle because compassion is my passion. I hope you can use at least some of this insight beneficially in your own life.

Thursday Breakfast:

Smoothie (as Sunday below)

Green Tea

2T  tamari almonds

Thursday Lunch: Vegan BLT & Berry salad

Thursday Dinner:

Cauliflower with Nut Cheese

Salad with 5 tofu balls

Thursday Dessert: Calming tea

Friday Breakfast:

Hot Green Tea

1 large Sliced Fuji Apple with Sliced Kite Hill Cashew cheese (new from whole foods SO GOOD)

2+ T of Tamari roasted organic Almonds

Friday Lunch:

3 soft tacos

Friday Dinner: Stir Fry

Friday Dessert:  Licorice tea

Saturday Breakfast:

1 pc Sprouted Rye toast with cashew cheese and sliced onion

1/2 c Decaf swiss process coffee with stevia and a splash of almond milk.

 1 satsuma tangerines

Saturday Lunch:

2C Chads “O gratin” taters

1 apple

Saturday Dinner:

Roasted Vegetables  & 1/2 c toasted quinoa

1 glass pom juice with pelegrino

Sunday Breakfast:

Vegan “eggz benedict”

Green Tea

Sunday Lunch:

Smoothie: 1 c fresh Spinach, 1/4 cup almond milk, 1/4 cup water (or more when i want it thinner) 1/4 cup blueberries, 1/2 zucchini, 1/2 bananna, 2 medjool dates, 2T flax meal, ice.

Sunday Dinner: 

Home made Sushi

1 glass organic white wine

Monday Breakfast:

Hot Green Tea

1 large Sliced Fuji Apple with Sliced Kite Hill Cashew cheese (new from whole foods SO GOOD)

2+ T of Tamari roasted organic Almonds

Monday Lunch:

4 Collared Green Wraps

1/4 cup raw cashews

1 satsuma tangerine

Monday Dinner:

Quinoa Shells Mac n nut cheeze with Organicville Catsup (1.5 cups)

Red butter leaf salad with cilantro, onions, radishes, celery (3 cups)

Monday Dessert: licorice tea

Tuesday Breakfast

1/2 c Decaf swiss process coffee with stevia and a splash of almond milk.

Rolled Oats  with chia seeds, flax flakes, blueberries, 1/4 cup almond milk. 1t maple

syrup

Tuesday Lunch:

3 soft tacos

Green Tea

Tuesday Dinner:

Quinoa Pasta (1/2 cup) with peppers, zucchini, tomatoes, pineapple and 5 tofu balls.

Dessert: Satsuma tangerine & licorice tea

Wednesday Breakfast:

1 pc Sprouted Rye toast with cashew cheese and sliced onion

1/2 c Decaf swiss process coffee with stevia and a splash of almond milk.

Wednesday Lunch:

Smoothie (same as Sunday)

1/2 sliced baked potato “fries” with yellow mustard

Wednesday Dinner:

Big ol salad & home made veggie soup. (we didnt put pasta in like this recipe, everything else is same)

Wednesday Dessert:

licorice tea
