These are great, I would definitely try them on any kids that wont eat their veggies!
2 tablespoons vegan parmesan or nutritional yeast
1 tablespoon dried herbs of your choice (thyme, parsley, cilantro ect)
pinch of salt
pinch of pepper
vegan mayonnaise (I love Grape seed Vegenaise!)
1 zucchini, cut into 1/4″ to 1/2″ rounds, you can pick these up at th 530 and 900 class on THURSDAY. 🙂
1. Turn on your toaster oven regular oven to broil.
2. In a small bowl, mix together vegan parmesan or nutritional yeast (buy in bulk at whole foods) parsley, salt, pepper and any herbs you like (i get spicy here. If you don’t have the garlic powder or parsley don’t worry about it. If you would like to use other spices go for it!
3. Spread a tiny bit of vegan mayo on one side of the zucchini round, dip the side with the mayo into the bowl of parm mix so that the parm sticks the the mayo. Place the zucchini parm side up on a a baking sheet.
4. Now here comes the tricky part: Cook it until it is done.
Stick it in the oven until the tops look golden. You can cook these so they are still a little firm like finger food or if they get a bit too cooked you can eat them as a side with a fork. Yum!
Makes: enough for 2 to 3 people, Preparation time: 7 minutes, Cooking time: about 10 minutes
