When life gives you broccoli, make broccoli tots! Perhaps not the most conventional wisdom, but great words to live by when you’re always looking for ways to add move veggies into your life.
Vegan, gluten free, dairy free
Recipe by Jentry Lee Hull adapted from Gimme Delicious
Broccoli Tots Ingredients
- 1 Tbsp. ground flax meal + 3 Tbsp. water (1 flax egg)
- 1 large or two small heads broccoli, stems removed and cut into florets
- 1/3 cup shallots or red onion, chopped
- 1 glove garlic, minced
- ½ cup almond meal
- 1/3 cup bread crumbs (gluten free, if desired)
- 1 Tbsp. fresh lemon juice
- ½ Tbsp. olive oil
- ½ tsp. oregano
- pinch of pink salt
- pinch of pepper
Broccoli Tots Directions
- Preheat oven to 425 degrees F.
- Line a baking sheet with parchment paper.
- Whisk together flax meal and water to make flax egg. Set aside for 5 minutes.
- Bring a large pot of water to a boil, add broccoli for 1 minute to blanch then remove from heat, drain and rinse with cold water.
- In a food processor, combine blanched broccoli, chopped onion/shallots and garlic. Pulse and blend until mixture is grainy-like – be careful not to over-mix into a paste.
- In a large mixing bowl, combine broccoli mixture with remaining ingredients. Adjust seasonings to taste.
- Cover bowl and place in fridge to set mixture for 20-30 minutes.
- Form mixture into tot shapes and place in rows onto lined baking sheet.
- Bake tots for 20-30 minutes at 425 degrees F. Turn halfway through to brown evenly on both sides.
- Once baked, remove from heat and let cool for about 5 minutes.
- Serve with Cashew Ranch (recipe coming soon) or other homemade sauce and enjoy!
