Some like it hot and some like it with a touch of curry. We like both when it comes to our soup. The creamy cauliflower, butternut squash blend dances together perfectly with the savory red curry, making this soup unbeatable on a cool, fall day.
CURRY & CAULIFLOWER BUTTERNUT SQUASH SOUP
Inspired by Cookie + Kate’s Curried Cauliflower Soup
Recipe by Jentry Lee Hull
Yields 4-5 servings
Ingredients:
- 1 package of diced, frozen organic butternut squash (I use Whole Foods 365 brand)
- 1 head cauliflower, chopped into florets
- 1 medium yellow onion, diced
- 2-3 cloves garlic, peeled, crushed and roughly minced
- 1 tsp. Himalayan salt, or to taste
- 2 cups plant milk (I use Good Karma Foods Flax Milk)
- 1 can light coconut milk
- 2 Tbsp. red curry paste
- ½ tsp. turmeric
Directions:
- In a large saucepan over medium heat, add diced onion and cauliflower florets. Cook for ~5 minutes until edges become golden brown.
- Reduce heat and add frozen butternut squash, and gently thaw. Be careful not to burn.
- Add minced garlic, stir and cook for another 1-2 minutes.
- Drizzle on olive oil, if desired. Add salt, both milks, curry paste, and turmeric. Reduce heat, cover and simmer for 15-20 minutes, until cauliflower and squash are tender.
- Remove from heat and carefully pour contents into food processor or keep in pot and blend using an emersion blender, if you have one handy. Scrape down sides as needed and test texture to be sure it’s even. You may have to blend for ~5 minutes. Pour mixture back into large saucepan, over low heat, stir and adjust seasonings to taste.
- Pour soup into serving bowls and top with caramelized onions, kale, pumpkin seeds, red pepper flakes or other seasonings and enjoy!
