Dessert is fun, but its even better when its got benefits! This raw cheeze cake, though it packs a punch, doesn’t pack the junk. The base is raw cashews, which are loaded with vitamins and antioxidants including vitamins E, K, and B6, along with minerals like copper, phosphorus, zinc, magnesium, iron, and selenium. All of these are important for maintaining great body and brain function. To boot, this cheezecake is dairy free, gluten free and has no processed sugar. Its been a hit at the parties I brought it to, and I hope it will be a hit for you too!

Gluten Free Easy Crust: 

1/2 cup dates
1 1/2 cups nuts (I used pecans and almonds)
Surround the inside of a cake pan with parchment paper. Process dates and nuts together until you get a rough, sticky mixture that you can pat down with your hands into the bottom of the cake pan. Do so. Set in fridge.
Cheezecake:
3 cups raw cashews (soaked for 3-4 hours) 
1/4 cup bourbon (you can sub out any flavorful liquid you like – lemon, lime, berry etc.)
1/4 cup coconut milk
2/3 cup maple syrup
3/4 cup melted coconut oil 
1 teaspoon salt
1 teaspoon vanilla extract
Blend all ingredients together until smooth and creamy. Pour onto crust in cake pan and set in the freezer until its firm (probably 3-5 hours or even overnight). Take out of cake pan holding the wax paper or plastic wrap and put on your favourite plate and glaze. Top each slice with a raspberry or two if you want to make it special.  Slice and enjoy.

Glaze: 

  • 1 cup fresh Strawberries, cleaned and mashed
  • 1 cup coconut sugar
  • 3 tablespoons arrowroot
  • 3/4 cup water
  1. Mash the Strawberries and set aside
  2. In a saucepan, combine sugar and cornstarch
  3. Stir in water and mashed berries
  4. Bring to a boil, stirring constantly
  5. Cook and stir 3 minutes until thick
  6. Remove from heat and transfer to bowl, cool 10-15 minutes
You can store this the fridge for up to 2 weeks… the longer it sits, the better it gets! I make this a few days in advance to give it a really nice thick texture.
