Chickpeas are a good source of nutrition – this 7500 year old bean is packed with fiber and protein. Hummus is a part of my daily life; add a hearty mix of raw or al dente steamed veggies and consider that plate cleared!
Enjoy this recipe for Healthy Hummus (used organic whenever possible)
2 15.5 Oz cans organic chickpeas
2 garlic cloves crushed
1/2 Cup Water
1/4 cup tahini
3 T fresh lemon juice
2 T extra virgin olive oil
3/4 t sea salt
1/4 t black pepper
Put the beans and garlic in your food processor and pulse 5 times until chopped. Add remaining ingredients and pull until smooth, scrape down sides as needed. Garnish with fresh parsley.
