You knew this day was coming. It was only a matter of time before kale and nice cream became one. I’m telling you, this is the best nice cream I’ve had to date. No bitterness. Just natural sweetness and creaminess from the bananas with a beautiful, bright green color (thanks to the kale) and intermittent bursts of chocolate deliciousness. So, it is true…you can have your kale and eat it, too!
KALE CHIP NICE CREAM
Recipe by Jentry Lee Hull
Yields 2 servings
Ingredients:
- 2 bananas, frozen
- 2 curly kale leaves, de-stemmed (curly green kale works best)
- ½ Tbsp. cacao nibs or dark chocolate chips
- ¼ – ½ cup plant milk
- 1 tsp. chia seeds
- 1 tsp. vanilla extract
Directions:
- In a high-powered blender, combine all ingredients – start with frozen bananas (break into chunks before freezing) and work your way down the list.
- Pulse to disperse ingredients then blend until creamy. Add more liquid to reach the desired consistency.
- Garnish with fresh kale, a few cacao nibs/choc chips and enjoy!
