If you’re jonesing for a savory dish to warm you up on a cool, fall night and you need it in a pinch, we have just the thing – Kale Polenta Squares. In about 30 minutes you’ll have an easy peasy, healthy, all-in-one, dish that will nourish your bod and satisfy your taste buds.
KALE POLENTA SQUARES
Recipe by Jentry Lee Hull
Ingredients:
- 1 medium onion, diced
- 1 clove garlic, crushed and minced
- 1 package cooked polenta (as pictured below)
- 1 – 1 ½ cups vegetable broth
- ½ cup frozen corn
- 1 large handful baby kale/chard/collard greens
- pinch of red pepper flakes
- pinch of Himalayan salt
Directions:
- Preheat oven to 450 degrees F.
- Line baking pan with parchment paper, set aside.
- Remove polenta from packaging and cut into cubes.
- In a large sauce pan, over medium heat, cook diced onions until golden brown, ~5 minutes.
- Add minced garlic and cook for another minute, then reduce heat.
- Add polenta cubes, broth, and corn. Cook on low heat and stir frequently until polenta becomes creamy and smooth.
- Fold in baby greens and pour polenta mixture into lined baking sheet.
- Sprinkle with seasonings and bake for ~10 minutes on 450 degrees F.
- Heat oven to high broil and place polenta on top rack. Broil for 2-3 minutes, or until golden brown on top.
- Remove from heat and let sit for 5 minutes.
- Cut into squares and top with desired toppings (Kite Hill Ricotta, marinara sauce, sautéed mushrooms, diced tomatoes, fresh basil, etc.)
- Enjoy!
