If you’re jonesing for a savory dish to warm you up on a cool, fall night and you need it in a pinch, we have just the thing – Kale Polenta Squares.  In about 30 minutes you’ll have an easy peasy, healthy, all-in-one, dish that will nourish your bod and satisfy your taste buds.

KALE POLENTA SQUARES

Recipe by Jentry Lee Hull

Ingredients:

  • 1 medium onion, diced
  • 1 clove garlic, crushed and minced
  • 1 package cooked polenta (as pictured below)
  • 1 – 1 ½ cups vegetable broth
  • ½ cup frozen corn
  • 1 large handful baby kale/chard/collard greens
  • pinch of red pepper flakes
  • pinch of Himalayan salt

Directions:

  • Preheat oven to 450 degrees F.
  • Line baking pan with parchment paper, set aside.
  • Remove polenta from packaging and cut into cubes.
  • In a large sauce pan, over medium heat, cook diced onions until golden brown, ~5 minutes.
  • Add minced garlic and cook for another minute, then reduce heat.
  • Add polenta cubes, broth, and corn. Cook on low heat and stir frequently until polenta becomes creamy and smooth.
  • Fold in baby greens and pour polenta mixture into lined baking sheet.
  • Sprinkle with seasonings and bake for ~10 minutes on 450 degrees F.
  • Heat oven to high broil and place polenta on top rack. Broil for 2-3 minutes, or until golden brown on top.
  • Remove from heat and let sit for 5 minutes.
  • Cut into squares and top with desired toppings (Kite Hill Ricotta, marinara sauce, sautéed mushrooms, diced tomatoes, fresh basil, etc.)
  • Enjoy!
