Happy Friday, y’all! Today is all about onions. Yes, onions. I know, they may not be the flashiest of foods, but by golly they’re good and good for you! Flavonoids, the pigment responsible for the reddish/purplue hue in red onions, contain antioxidants, which contain anti-fungal, anti-bacterial and anti-inflammatory properties. Onions also add some serious flavor and color to everything under the sun – from salads and pasta, to soups, sandwiches and pizza. By massaging red onions in lime or orange juice, the acidity of the citrus juices causes a release of the flavonoid pigment; transforming the onions into a more vibrant, brilliant purple. Even better, the flavor of the onions becomes softer and just a tad bit sweet. As a result, these massaged red onions are magical meal-makers. And, they only require a few ingredients – red onion, salt, and freshly squeezed lime and orange juice.
MASSAGED RED ONIONS
Ingredients:
- 2 large red onions
- 1/4 cup lime juice (about 2 limes)
- 1/4 orange juice (1 large orange)
- pinch of pink Himalayan salt
- 1 clove garlic, pressed and minced (option – good for marinades and stuff)
Directions:
- Peel and thinly slice 2 large onions.
- In a large bowl, combine all ingredients. With your hands mix and massage the ingredients together until the onions become tender.
- Transfer into an air-tight container and store in the fridge for up to a week.
