Increased lifespan, the “second meal effect”, easy on the pocket book, and protein-rich. These are just a few of my favorite things about lentils. Lentils are the golden child of the legume family. They’re great for our health and our longevity, and they provide a savory, scrumptious flavor. What’s better than that?
Get ready to sink your teeth into these delightful Mediterranean Lentil Tacos. A little spicy, but not over the top, and really refreshing, thanks to the Almond Yogurt Tzatziki Sauce. You’ll want to savor every single bite.
MEDITERRANEAN LENTIL TACOS
Vegan, gluten free, dairy free, refined oil free
Recipe by Jentry Lee Hull
Yields 6-8 servings
LENTIL TACO INGREDIENTS
- 1 medium onion, diced
- 2-3 cloves garlic, crushed and minced
- 1 15 oz. can diced or stewed tomatoes
- 2 cups green lentils, rinsed and drained
- 2 cups vegetable broth
- 2 Tbsp. tomato paste
- 1 tsp. pink salt
- ½ tsp. coriander
- ½ tsp. sage
- ½ tsp. paprika
- ¼ tsp. cayenne pepper
- tortillas (I used La Tortilla Factory brand, they have GF options)
ALMOND YOGURT TZATZIKI INGREDIENTS
- 1 container Kite-Hill Plain Yogurt (available at Whole Foods)*
- 1 small cucumber, peeled and roughly chopped
- juice from ½ lemon
- 1 Tbsp. fresh dill
- 2-3 cloves garlic, crushed and minced
- ½ tsp. pink salt
- pepper, to taste
LENTIL TACO DIRECTIONS
- In a large saucepan over medium heat, sauté onion until translucent and caramelized, using water or broth to prevent sticking.
- Add minced garlic and cook for another minute.
- Incorporate tomatoes and let simmer for a few minutes.
- Stir in lentils, vegetable broth and spices. Reduce heat to low-medium and cover.
- Allow the ingredients to marry together at a gentle simmer for 20-25 minutes, or until lentils are tender. Stir every few minutes to prevent sticking.
- Meanwhile, in a nonstick skillet over medium-high heat, warm tortillas – cook for about 2 minutes on each side, or until edges are golden brown.
ALMOND YOGURT TZATZIKI DIRECTIONS
- Combine all ingredients in a food processor and blend until well-combined.
- Keep chilled until ready to serve.
- Store leftovers in an airtight container in the refrigerator for up to 7 days.
NOTES
- For those of you with nut allergies, plain soy yogurt or tahini could work in place of the almond milk yogurt.
