If you read yesterday’s post, you know how fantastic stone fruits are for you.  So, how could you resist a Nectarine Oat Basil Smoothie on this find Saturday morning?  It’s tart, creamy, not too sweet, and packs a serious nutrient-rich punch. Enjoy!!

NECTARINE OAT BASIL SMOOTHIE

Recipe by Jentry Lee Hull

Yields ~2 servings

Ingredients:

  • 16 fl. oz. nondairy milk
  • Juice from 1/2 large orange
  • juice from 1/2 small lemon
  • 2 ripe nectarines, pitted
  • 2-3 frozen bananas (peel before freezing)*
  • 1/4 cup rolled uncooked oats
  • 2 Tbsp. chia seeds
  • 1 Tbsp. almond butter
  • 1 tsp. pure vanilla extract
  • 6 basil leaves

Directions:

  • Place ingredients in a high-powered blender and blend until smooth.
  • *start with 2 frozen bananas, add the 3rd for extra thickness
