If you read yesterday’s post, you know how fantastic stone fruits are for you. So, how could you resist a Nectarine Oat Basil Smoothie on this find Saturday morning? It’s tart, creamy, not too sweet, and packs a serious nutrient-rich punch. Enjoy!!
NECTARINE OAT BASIL SMOOTHIE
Recipe by Jentry Lee Hull
Yields ~2 servings
Ingredients:
- 16 fl. oz. nondairy milk
- Juice from 1/2 large orange
- juice from 1/2 small lemon
- 2 ripe nectarines, pitted
- 2-3 frozen bananas (peel before freezing)*
- 1/4 cup rolled uncooked oats
- 2 Tbsp. chia seeds
- 1 Tbsp. almond butter
- 1 tsp. pure vanilla extract
- 6 basil leaves
Directions:
- Place ingredients in a high-powered blender and blend until smooth.
- *start with 2 frozen bananas, add the 3rd for extra thickness
