Enjoy the bounty of summer with this tasty, easy Squash + Quinoa Salad.  It has the right blend of ingredients to make for a filling main dish and it’s great for a side, too.  Don’t forget to garnish with fresh herbs and Kite Hill Cheese.  It’ll take your salad to the next level.

Roasted Summer Squash + Quinoa Salad

Vegan, dairy free, gluten free

Recipe by Jentry Lee Hull

Yields about 6 servings

SALAD INGREDIENTS

  • 4-6 summer squash, diced
  • 1 medium red onion, diced
  • 1 tsp. pink Himalayan salt
  • 1 tsp. garlic powder
  • 1-2 tsp. chili lime seasoning (available at Trader Joe’s)
  • 2 Tbsp. fresh chives, minced
  • 1-2 tsp. olive oil, optional
  • 3 cups cooked quinoa*
  • fresh herbs (dill, basil, oregano, chives) for garnish
  • Kite Hill Soft Fresh Truffle Dill & Chive cheese (available at Whole Foods) for garnish

SALAD METHOD

  • Preheat oven to 450 degrees F.
  • Line 2 baking sheets with parchment paper.
  • In a large mixing bowl, combine diced summer squash, diced red onion, salt, garlic powder, chili lime seasoning, chives and olive oil (optional). Toss to evenly coat.
  • Transfer mixture onto lined baking sheets and spread into even layers.
  • Bake for 20-30 minutes on 450 degrees F. Turn halfway through.
  • Meanwhile, cook quinoa – see notes below.
  • Once squash and quinoa are cooked, stir together in a large mixing bowl, transfer to a serving dish, and garnish with fresh herbs and crumble on Kite Hill almond cheese.
  • Serve at room temperature or chilled.
  • Store leftovers in an airtight container in the fridge for 5-7 days.

NOTES

  • To make 3 cups cooked quinoa, bring 2 cups liquid (veggie broth or water) to a boil, add 1 cup quinoa, pinch of salt, stir, reduce heat to low and cover. Let cook for about 15 minutes.  See here for more quinoa cooking tips.
  • If you prefer to grill your squash instead of roasting it in the oven, go for it!  It’ll be delicious.
