We haven’t hopped off the salad bandwagon yet. No way! We’re just getting started. With all this great weather comes outdoor BBQs, picnics, dinner parties, pool parties, and all that jazz. This Smokehouse Chickpeas ‘n’ Greens Salad has all the flavors of summer…smokey, tangy, sweet, spicy, citrusy, and savory. It will fill you up and won’t weigh you down, so you can still enjoy some fun in the sun!

SMOKEHOUSE CHICKPEAS ’N’ GREENS SALAD

From Terry Hope Romero’s Salad Samurai 

Yields 2 Servings

Roasted BBQ Chickpeas:

  • 2 Tbsp. olive oil
  • 1 (15oz) can chickpeas, drained and rinsed
  • 1 Tbsp. tamari
  • 1 rounded Tbsp. tomato paste
  • 1 Tbsp. pure maple syrup
  • 1 tsp. liquid smoke
  • 2 Tbsp. nutritional yeast

Salad:

  • 6 cups baby greens or baby spinach
  • 1 red onion, thinly sliced
  • 1/2 pint cherry tomatoes, sliced in half
  • 1 large, ripe avocado, diced or thinly sliced
  • 1/2 cup julienned carrot
  • freshly ground black pepper to taste

Smoked Paprika Dressing:

  • 2 Tbsp. apple cider vinegar
  • 1 Tbsp. olive oil
  • 1 shallot, minced
  • 1 Tbsp. pure maple syrup
  • 1 1/2 tsp. smoke sweet or hot paprika
  • 1/2 tsp. smoked or pink salt

Directions:

  • Preheat a large skillet over medium-high heat, then pour in olive oil and tilt the pan to coat the bottom with oil.
  • Add the chickpeas and sauté for about 6 minutes, or until golden.
  • Whisk together the tamari, tomato paste, maple syrup, and liquid smoke.
  • Pour sauce over the chickpeas, reduce the heat to low, and simmer for 4 minutes or so, stirring occasionally.
  • Turn off the heat and cover to keep warm.
  • Meanwhile, tear the greens into bite-size pieces, wash, and spin dry.
  • Transfer to a large salad bowl and add the onion, tomatoes, avocado, and carrot.
  • Whisk together all the dressing ingredients and pour over the salad.
  • Toss the vegetables to coat with dressing and divide the salad among serving bowls.
  • Sprinkle nutritional yeast over the warm chickpeas and stir to coat.
  • Top the salad with chickpeas and a twist of freshly ground black pepper to taste, and serve it up!
