Have you ever just wanted to eat a stack of pancakes and feel great about it? Well, today is your lucky day! Its taken me at least few years to work this recipe, I’ve posted it before but now its new and improved with less processed ingredients and more nutrients. And yes, there are 4 tablespoons of silken sprouted tofu in the recipe. Don’t worry though, it won’t kill you! If you are allergic to soy you can try a full banana and 1 T of ground chia seeds mixed with 4T of water. I can’t promise the amazing texture that I got with this recipe, however!

Gumsaba Gluten Free Vegan Pancakes

Makes 12, 3” pancakes:

1/2 cup Bob’s Red Mill Gluten Free flour or 1/4 cup each millet flour & sorghum flour

1/4 cup tapioca starch or arrowroot powder

1/4 cup almond meal <http://store.honeyvillegrain.com/blanchedalmondflour5lb.aspx>

1 tsp. baking powder

1/2 tsp. baking soda

1/4 tsp. salt

smidge of cinnamon (less than 1/8 tsp.)

1 tbsp. Coconut sugar

1/4 cup Silken Sprouted Tofu (Wildwood brand is what I use)

2T Kite Hill Cashew Creme Cheese

1/2 ripe bananna

3/4 cup almond milk

2 tbsp. coconut oil, melted

1 tsp. vanilla extract

Raspberry Delight Syrup: 

1 8oz package raspberries

maple syrup

Whisk together flour, cornstarch, almond meal, baking powder, baking soda, salt, cinnamon, and sugar in a large bowl.

Heat a cast iron pan over Medium and spray or coat lightly with coconut oil.

Put tofu, sour cream, bananna, rice milk, melted coconut butter, and vanilla into a blender or use a hand blender, and mix until thoroughly blended and  smooth.

Pour the liquids into the dry ingredients, folding gently. Be very careful not to overmix.

Pour about 1/4 cup onto the griddle. Wait until the surface is dry to flip. When the surface is almost completely dry and edges of the pancake begin to brown, flip it. Cook another 4-5 minutes. Keep warm in the oven on lowest heat while the rest cook.
Raspberry Delight Syrup: While the pancakes are cooking make the syrup. Combine raspberries and syrup in a soup pan. Heat until it bubbles then cover it. I use about 4T worth of syrup, but that is up to you!
